This is one of my all time favorite weekend recipes! My mom used to make it on Sunday mornings and I never thought I would look forward to something gluten-free so much. The best part? You get to use packaged gluten-free Bisquick! It is low energy and absolutely divine. You can also find this recipe on Betty Crocker’s website!
This is a super easy cake, you’ll just want to mix together:
- 1 2/3 cups of gluten-free Bisquick
- 3 tablespoons of sugar
- 2/3 cup of milk (I use almond or soy milk)
- 3 eggs
- Vanilla (I usually eyeball this, you can never have too much)
Blend these all together and we can get started on the streusel part! For that you’ll need:
- 1/2 cup of brown sugar
- 1/3 cup of gluten-free Bisquick
- About 1 teaspoon of cinnamon
- 1/4 cup of butter
You’ll want to mix up all your dry ingredients and then mash in the butter (or shortening if you choose) with a fork until it is nice and crumbly.
Now, pick your pan and grease it up, its time to get baking! I usually layer down some cake mix, followed by a nice surprise layer of streusel, and then the last half of the cake batter. Top it all off with a hefty dose of that amazing streusel and get it in a 350 degree oven for around half an hour. 30 minutes later and BOOM, you have a delicious gluten free confection ready to be devoured.
